What is Black Garlic? Carefully chosen, high quality, raw garlic that has been expertly aged using nothing but heat & humidity for a very long time. We age our garlic at a low temperature for a given amount of time to produce a sweet, creamy, flavorful taste.
What does it taste like? Once aged, it's totally different than raw garlic, it’s a much more mellow taste, but with complexity & depth, a sweet savory umami flavor that tastes of molasses, balsamic, tamarind, caramel, dates & much more.
How long will it keep and how to store it? Once aged, Black Garlic can be stored in the fridge for a long time. You'll normally find our garlic has around 2-month shelf life.
Will it make your breath smell? No, unlike regular garlic, Black Garlic won't scare off vampires, or anyone else! It has a sweet, fruity, flavor & smell to go with it.
Where did Black Garlic originate? History says that Black Garlic has been used in many Asian cuisines for centuries & is thought to have originated in South Korea.
What is it good for? your thought is the limit A head of Black Garlic goes a long way, one is perfect for a large pasta for a family or to make a Black Garlic pesto, great for BBQ seasonings or sauces. Great for a Black Garlic salad dressing & so much more!

How can I purchase it, or products made from it? At Café Chocolade we make it in small batches, 2-3 pounds at a time & it takes 7-13 days to make. So, production is limited, you can stop in or call to see what we have on hand. We will have our Black Garlic at the Farmers Markets when they start this Spring as well. Products we make using our Black Garlic are on our weekly menu. We can make specialty items by request, dairy free cheese, whole garlic, or bread, more items as I invent them.
Our garlic is American grown & not imported. Make sure you ask at any restaurant that does use black garlic, most is imported.
