Plant Based Gyro’s
Meat-less
1 ½ tbsp olive oil or oil of choice
heat
1 medium Vedalia onion diced
Sauté in oil, tills onions soften
300 g mushrooms (no buttons) best (portabella, oyster, shitake, Chantelle, or such)
2-3 cloves garlic finely minced
Add to onions and sauté till the mushroom water is gone, 3-5 minutes
3 tsp gyro seasoning (see notes)
Add to mushrooms
¼ cups vegetable broth
1 tbsp tomato paste
3 tbsp soy sauce GF
1 tbsp maple syrup
1 ½ tsp vinegar
Add the wet ingredients to the mushroom mix and heat till it gets a bit thicker, just a few minutes.
Fill your Cafe Chocolade pitas, add your fillings and enjoy!
Gyro seasoning
1/2 tsp oregano, dried
1/2 tsp sweet paprika powder
1/4 tsp thyme, dried
1/4 tsp coriander powder
1/4 tsp pepper, ground
1/4 tsp cumin, ground
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp marjoram, dried
1/4 tsp salt
1/8 tsp chili flakes
Other ingredients
4 Gluten Free pita breads from Cafe Chocolade
1 small head lettuce
2-3 tomatoes
1 cucumber
1 batch tzatziki
Fresh herbs
