Pickle de Gallo 

 

1  cup  finely diced dill pickles 

1  cucumber, finely diced 

1  Roma tomato, finely diced 

1  clove garlic, minced 

½  medium Vidalia onion, finely diced 

½  red bell pepper, finely diced 

⅓  cup pickle brine (from the pickle jar) 

¼  cup chopped cilantro 

2  tablespoons lime juice (about 1 lime) 

½  teaspoon salt 

Mix all together, chill and serve 

No reason to buy Farmers Market Salsa.
