Salsa Verde Mexicana
3 cups water
8 tomatillos, husks removed and rinsed
Boil tomatillos in water for about 15 minutes
3 serrano or jalapeño pepper, stemmed and roughly chopped, seeds or not
1 garlic cloves, skin on
roast in toaster oven for ten minutes, till skin starts to blacken, cool, remove skin
¼ onion, chopped
1 handful cilantro (optional)
½ teaspoon salt
½ teaspoon Black pepper
Place all items in processor or blender and blend almost smooth, chunky is good.
No need to buy it at a grocery store or farmer’s market.
