Lemon Vinaigrette

 

1 medium lemon, scrubbed

Remove ends, cut into quarters, remove seeds, run whole lemon through blender till smooth.

3/4     cup extra-virgin olive oil

1/4     cup mixed fresh tender herbs (such as chives, dill, and basil)

2 TBS  rice vinegar

1 tsp    Dijon mustard

1         small garlic clove, smashed

Add to lemon mix and pulse again to mix.

2 tsp   sea salt

1/4 tsp             black pepper

Pour into bowl and season.

Chill and enjoy!
